Preheat your oven to 190 degrees Celsius. Line two large baking sheets with parchment paper.

In a clean, dry bowl, whip the Egg whites with an electric mixer until soft peaks form. Gradually add 50 grams of the Granulated sugar, continuing to whip until stiff, glossy peaks are achieved.

In a separate bowl, whip the Egg yolks with the remaining 50 grams of Granulated sugar and the Vanilla extract until the mixture is pale yellow and thick.
