1Place 200g thin rice vermicelli in a large bowl and cover with hot water. Let soak for 8-10 minutes until pliable but still firm. Drain thoroughly and set aside.
2Slice 150g lean pork shoulder thinly against the grain.
3Mince 20g garlic and 15g ginger. Slice 50g scallions, separating the white and green parts. Julienne 80g carrot.
