1Preheat your oven to 170°C. Line a baking sheet with parchment paper.
2In a large mixing bowl, combine the finely ground almonds and 200g granulated sugar.
3Add the eggs and lemon zest to the almond mixture. Mix thoroughly with your hands until a cohesive, firm dough forms. If the dough feels too sticky, you may add a very small amount of additional ground almonds.
