1Bring a large pot of water to a rolling boil for the Spaghetti. Add 10 grams of Fine sea salt to the boiling water.
2While the water heats, gently separate the Fresh sea urchin roe into a small bowl. Set aside about one-third of the roe for finishing.
3In a large skillet, heat the Extra-virgin olive oil over medium-low heat. Add the Garlic and Chili pepper and sauté gently until the Garlic is fragrant and lightly golden, about 2-3 minutes. Do not let the Garlic burn.
