1Dissolve the Fresh yeast in 50 grams of the Water in a small bowl.
2In a large bowl, combine the 00 flour with the remaining 250 grams of Water. Mix until a shaggy dough forms.
3Add the Sea salt and the dissolved Fresh yeast mixture to the dough. Knead the dough on a clean surface for 10-15 minutes until it is smooth and elastic.
