1Carefully peel the skin from the 500 grams of dragon fruit, discarding the skin. Cut the dragon fruit flesh into rough chunks.
2Combine the dragon fruit chunks, 500 grams of water, and 100 grams of piloncillo in a blender. Blend until smooth.
3Pour the blended dragon fruit mixture through a fine-mesh sieve into a large pitcher, pressing down on any solids with a spoon to extract all liquid. Discard any remaining pulp.
