1Thoroughly wash the Pompia fruit under cold running water. Using a sharp knife, score the Pompia fruit deeply around its circumference, or prick the skin all over with a fork, taking care not to pierce the pulp too deeply.
2Place the Pompia fruit in a large pot and cover completely with cold water. Bring to a boil over medium-high heat and simmer for 45 minutes. Drain the Pompia fruit and discard the water.
3Repeat the boiling process two more times, each time using fresh cold water and simmering for 45 minutes. This helps to remove bitterness and soften the rind.
