1In a large mixing bowl, combine the Glutinous rice flour and Granulated sugar. Gradually add Water, mixing with your hands until a soft, pliable dough forms. Knead the dough for 5 minutes until it is smooth and uniform.
2Divide the glutinous rice dough into 8 equal portions. Roll each portion into a smooth ball, then gently flatten it into a disc approximately 1 cm thick.
3Prepare the dipping sauce: Finely mince the Garlic and thinly slice the Scallion. In a small bowl, combine the Light soy sauce, Chinkiang vinegar, Chili flakes, minced Garlic, and Sesame oil. Stir thoroughly to combine and set aside.
