1Rinse the Red beans thoroughly and soak them in ample cold water overnight, or for at least 8 hours. Drain the Red beans.
2Place the soaked Red beans in a large pot and add enough fresh Water to cover them by about 5 cm. Bring to a boil over high heat, then reduce heat and simmer for 10 minutes. Drain the Red beans and discard the water.
3Return the Red beans to the pot with fresh Water, again covering by about 5 cm. Bring to a boil, then reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until the Red beans are very tender and easily mashable.
