1Gently clean the Zucchini flowers, carefully removing the pistil from inside and any small leaves at the base, being careful not to tear them.
2Drain the Mozzarella di bufala well and pat dry with paper towels. Cut the Mozzarella di bufala into small, rectangular pieces, approximately 1x2 cm. Drain the Anchovy fillets in olive oil and pat dry.
3Carefully open each Zucchini flower and insert one piece of Mozzarella di bufala and one Anchovy fillet. Gently twist the top of the Zucchini flower to seal it.
