1Gently wipe the Thin Kombu Strip with a damp cloth to clean, then place it in a saucepan with Water.
2Grate the Fresh Ginger finely and add it to the saucepan with the Water and Thin Kombu Strip.
3Heat the mixture over medium-low heat until just before boiling (around 80°C), then remove from heat and let steep for 15 minutes. This extracts a very light kombu and ginger infusion.
