1Wash the Baby brinjal thoroughly. Slit each brinjal into quarters from the bottom, keeping the stem intact. Soak the slit brinjal in salted water to prevent discoloration.
2In a dry pan, lightly roast Coriander seeds, Chana dal, Urad dal, Dry red chilies, Fenugreek seeds, Cumin seeds, Black peppercorns, and Sesame seeds until fragrant. Allow them to cool.
3Grind the roasted spices with Fresh coconut, Tamarind pulp, Turmeric powder, Asafoetida, and 5 grams of Salt into a fine paste, adding a minimal amount of Water if necessary.
