1Prepare the soffritto: In a large pot, heat the Extra-virgin olive oil over medium heat. Add the Onion, Carrot, and Celery and sauté gently until softened, about 8-10 minutes.
2Add aromatics: Stir in the minced Garlic and the sprig of Fresh rosemary. Cook for another 2 minutes until fragrant.
3Cook the Pumpkin: Add the diced Pumpkin to the pot. Sauté for 5-7 minutes, stirring occasionally, allowing the Pumpkin to slightly caramelize.
