1In a large bowl, combine Maida flour and 50g Ghee. Rub the Ghee into the flour with your fingertips until the mixture resembles breadcrumbs.
2Gradually add 100g Water and knead to form a firm, smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
3Meanwhile, prepare the filling. In a heavy-bottomed pan, gently roast Khoya over low heat for 5-7 minutes until it turns light golden and aromatic. Remove from heat and let it cool slightly.
