Remove the casing from the Mexican chorizo. In a medium skillet over medium heat, add the Vegetable oil. Once hot, add the Mexican chorizo and cook, breaking it up with a spoon, until fully browned and crispy, about 8-10 minutes. Drain off any excess fat, leaving about 1 tablespoon in the skillet with the chorizo.

Add the White onion and Serrano pepper to the skillet with the cooked Mexican chorizo. Sauté for 3-5 minutes, until the White onion is softened and translucent.

Reduce the heat to low. Evenly sprinkle the shredded Oaxaca cheese over the chorizo mixture in the skillet.
