1Cut the Suadero into large, manageable chunks.
2In a heavy-bottomed pot or Dutch oven, melt 150g of the Lard over medium heat. Add the Suadero chunks and sear them on all sides until lightly browned.
3Roughly chop 150g of White onion and 30g of Garlic. Add them to the pot with the Suadero. Stir and cook for 5 minutes until fragrant.
