1In a large bowl, combine the Chickpea flour and Water. Whisk thoroughly until no lumps remain and the batter is smooth.
2Cover the bowl and let the batter rest at room temperature for at least 2 hours, or preferably overnight (up to 12 hours). This allows the flour to fully hydrate and the flavors to meld.
3After resting, skim off any foam that has risen to the surface of the batter using a spoon.
