1Slice the Pork loin against the grain into thin, bite-sized pieces, approximately 3mm thick. Place the sliced Pork loin in a bowl.
2Add 15g Light soy sauce, Shaoxing wine, and White pepper to the Pork loin. Mix well and let it marinate for 15 minutes.
3For the batter, combine 150g Potato starch, Egg white, 100g Water, and 2g Salt in a separate bowl. Mix until a smooth, thick batter forms. The consistency should be like thick pancake batter.
