In a large mixing bowl, combine atta flour, cumin seeds, turmeric powder, red chili powder, asafoetida, and salt. Mix all the dry ingredients thoroughly.

Add 15g ghee to the dry ingredients and rub it into the atta flour with your fingertips until the mixture resembles coarse crumbs.

Gradually add water, a little at a time, and knead to form a very stiff dough. The dough should be much firmer than regular roti dough.
