1Carefully clean the Nopalitos by removing all spines and 'eyes' with a sharp knife. Dice the cleaned Nopalitos into 1 cm squares.
2Place the diced Nopalitos in a pot with 10g Kosher salt and enough water to cover them. Bring to a boil and cook for 15-20 minutes, or until they are tender and the mucilaginous liquid has dissipated. Drain the Nopalitos thoroughly and rinse them under cold water. Set aside.
3Finely dice the White onion. Mince the Garlic clove. Finely slice the Serrano chile. Roughly chop the Fresh cilantro.
