1Prepare all ingredients: Dice the char siu pork into small cubes. Peel and devein the shrimp. Dice the carrots into small pieces. Mince the garlic and ginger. Chop the scallions, separating the white parts from the green parts.
2In a small bowl, lightly beat the eggs. Heat a small amount of vegetable oil in a wok over medium heat. Pour in the beaten eggs and scramble until just set, then remove from the wok and set aside.
3Heat the remaining vegetable oil in the wok over high heat until smoking. Add the minced garlic, minced ginger, and the white parts of the scallions. Stir-fry for 15 seconds until fragrant.
