Remove the casing from the Longaniza and crumble the sausage meat into a large skillet.

Add the Vegetable oil to the skillet with the crumbled Longaniza. Cook over medium heat, breaking up any large pieces with a spoon, until the Longaniza is fully cooked through and browned, about 10-15 minutes. Drain any excess fat if desired.

While the Longaniza is cooking, prepare the toppings: finely dice the White onion and roughly chop the Fresh cilantro. Cut the Lime into wedges.
