In a bowl, combine the sliced Pork loin with 20 grams of Shaoxing wine, 15 grams of Light soy sauce, Cornstarch, White pepper, and Sesame oil. Mix well and marinate for at least 15 minutes.

Prepare the stir-fry sauce by combining 20 grams of Light soy sauce, Dark soy sauce, Granulated sugar, Chinkiang vinegar, 15 grams of Shaoxing wine, and Water in a small bowl. Stir until the sugar dissolves.

Heat a wok over high heat until smoking. Add 15 grams of Vegetable oil, swirling to coat the wok. Add the marinated Pork loin and stir-fry quickly until it is just cooked through and lightly browned, about 2-3 minutes. Remove the Pork loin from the wok and set aside.
