1Wash 300 grams of Japanese short-grain rice thoroughly under cold running water until the water runs clear. Drain well and let it sit in a colander for 30 minutes.
2Combine the washed Japanese short-grain rice and 360 grams of Water in a heavy-bottomed pot with a tight-fitting lid. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 15 minutes.
3Remove the pot from heat and let the Japanese short-grain rice steam, covered, for another 10-15 minutes. Do not lift the lid during this time.
