1Heat the cooking oil in a wok over medium heat until it reaches approximately 150°C. Add the peanuts and fry gently, stirring constantly, until they turn golden brown and become fragrant. This usually takes about 3-5 minutes. Be careful not to burn them.
2Remove the peanuts from the wok using a slotted spoon and drain them thoroughly on paper towels. Allow the peanuts to cool completely to ensure maximum crispness.
3While the peanuts cool, finely mince the garlic and chop the scallion into small rings.
