Slice the Pork neck into 1.5-2 cm thick pieces. Score both sides of each Pork neck slice lightly in a crisscross pattern to help absorb the marinade and cook evenly.

In a large bowl, combine Soy sauce, Gochujang, Gochugaru, Minced garlic, Minced ginger, 15g of Sesame oil, Mirin, Brown sugar, Black pepper, and Toasted sesame seeds. Finely chop the Green onion and add it to the marinade mixture.

Add the sliced Pork neck to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, or preferably 2-4 hours for deeper flavor.
