Remove the casing from the Mexican chorizo, if present. Break the Mexican chorizo into small pieces in a large skillet over medium heat.

Cook the Mexican chorizo, stirring occasionally and breaking up any large clumps, until it is fully cooked through and browned, about 10-15 minutes. Drain any excess fat, if desired, but some fat is traditional for flavor.

While the Mexican chorizo cooks, finely dice the White onion and roughly chop the Fresh cilantro. Cut the Lime into wedges and crumble the Queso fresco.
