1In a small bowl, warm the Whole milk slightly (to about 37°C). Crumble the Fresh yeast into the warm Whole milk along with 10 grams of Granulated sugar. Stir gently and let it sit for 10 minutes until foamy.
2In a large mixing bowl, combine the 00 flour, remaining Granulated sugar, Fine sea salt, Lemon zest, and Orange zest. Make a well in the center.
3Pour the activated Fresh yeast mixture into the well. Add the Whole eggs, Egg yolks, and Vanilla extract. Begin to mix with a wooden spoon or stand mixer with a dough hook until a shaggy dough forms.
