1Thoroughly clean the chicken wings and pat them completely dry with paper towels.
2In a large bowl, combine chicken wings with 30 grams of soy sauce, grated ginger, 15 grams of minced garlic, 2 grams of black pepper, and soju. Mix well to coat and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
3In a separate bowl, prepare the batter by whisking together potato starch, all-purpose flour, baking powder, and 150 grams of water until a smooth, thick consistency is achieved.
