Rinse 1000 grams of tripas de res thoroughly under cold running agua, ensuring all impurities are removed.

Place the cleaned tripas de res in a large pot and cover with 2000 grams of agua. Add 15 grams of ajo, peeled and smashed, and 5 grams of sal de mar. Bring to a boil, then reduce heat and simmer for 60-90 minutes, or until the tripas de res are very tender.

Drain the cooked tripas de res and let them cool slightly. Discard the cooking agua and ajo.
