Shred the Pork into thin, uniform strips, about 5cm long.

In a bowl, combine the shredded Pork with 15g Shaoxing wine, 10g Light soy sauce, 10g Corn starch, White pepper, and Sesame oil. Mix well until the Pork is evenly coated, then set aside to marinate for 15 minutes.

Shred the Green peppers into similar-sized strips as the Pork. Mince the Ginger and Garlic. Slice the Scallion into 5cm segments. Roughly chop the Fermented black beans and Dried red chilies.
