1For Luchi: Sift the Maida into a large bowl. Add 15 grams Ghee, 5 grams Sugar, and 3 grams Salt. Mix well with your fingertips until the mixture resembles breadcrumbs.
2Gradually add 100 grams Water, kneading to form a firm, smooth dough. The dough should not be sticky. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
3Divide the rested dough into small, equal-sized balls, about 15 grams each. Lightly grease your palms with a tiny bit of Ghee and roll each ball into a smooth sphere.
