1Preheat your oven to 180 degrees Celsius. Prepare the Radicchio by removing any damaged outer leaves, then rinse thoroughly under cold water. Cut each head of Radicchio lengthwise into quarters or halves, depending on size, and pat dry.
2Heat the Extra-virgin olive oil in a large, oven-safe skillet or a wide, heavy-bottomed pan over medium heat. Add the diced Pancetta and cook until crispy and golden, about 5-7 minutes. Remove the crispy Pancetta with a slotted spoon and set aside, leaving the rendered fat in the pan.
3Add the minced Garlic to the pan and sauté for 1 minute until fragrant, being careful not to burn it. Add the prepared Radicchio to the pan. Sauté the Radicchio for 5-7 minutes, turning occasionally, until it begins to soften and wilt.
