2Heat a large, heavy-bottomed wok or pan over medium-high heat. Add a portion of the wilted fresh green tea leaves, ensuring not to overcrowd the pan.
3Continuously stir and toss the fresh green tea leaves vigorously for 5-7 minutes, applying gentle pressure with a wooden paddle to break down cell walls and ensure even roasting without burning. This develops the characteristic nutty aroma.
