1Soak the red beans in 500g of water for at least 4 hours or preferably overnight.
2Drain the soaked red beans. Place them in a pot with 500g of fresh water, bring to a boil, then reduce heat and simmer until the red beans are very tender, about 30-40 minutes. Drain and set aside.
3Wash the sweet pumpkin thoroughly. Carefully cut it in half, scoop out the seeds and fibrous strands. Peel the skin from the sweet pumpkin. Cut the peeled sweet pumpkin flesh into 3-4 cm chunks.
