1Rehydrate the Dried Pollock by soaking it in cold water for approximately 30 minutes until pliable. Drain thoroughly, squeeze out excess water, remove any bones or skin, then shred the rehydrated Dried Pollock into bite-sized pieces.
2Prepare the Malted Barley Powder liquid by mixing Malted Barley Powder with 500 grams of warm water. Let it sit for 30 minutes, then strain the liquid through a fine mesh sieve, discarding the solids. Allow the liquid to settle for another 10 minutes, then carefully pour off the clear liquid, leaving any sediment behind.
3In a large bowl, combine the shredded Dried Pollock with 20 grams of Fine Sea Salt. Mix well and let it sit for 30 minutes to draw out moisture.
