1Soak 150 grams of pine nuts in hot water for 15-20 minutes, then drain and rub them between your hands to remove any remaining skins. Rinse thoroughly.
2Combine the peeled 150 grams of pine nuts with 800 grams of cold water and 5 grams of salt in a blender. Blend until very smooth and creamy.
3Pass the pine nut mixture through a fine-mesh sieve or cheesecloth, pressing firmly to extract all the liquid. Discard the solids. Chill the pine nut broth in the refrigerator for at least 30 minutes.
