1Remove the stems and seeds from the dried chipotle morita chiles. Place the dried chipotle morita chiles in a heatproof bowl and cover them with hot water. Let them soak for 20 minutes until they are softened.
2While the chiles soak, roughly chop the Roma tomatoes, white onion, and garlic cloves.
3Heat the vegetable oil in a medium pot or large skillet over medium heat. Add the chopped Roma tomatoes, white onion, and garlic cloves to the pot. Sauté for 8-10 minutes until the vegetables are softened and slightly caramelized.
