1Rinse 100g short-grain rice thoroughly until the water runs clear. Soak the short-grain rice in cold water for at least 2 hours, or preferably overnight.
2Drain the soaked short-grain rice completely. Transfer the short-grain rice to a blender with 300g water and blend until a fine, smooth paste is formed.
3Pour the rice paste into a heavy-bottomed pot. Bring to a gentle boil over medium heat, stirring constantly to prevent sticking to the bottom.
