2Place Adzuki beans in a pot with plenty of water, bring to a boil, then drain. This initial boil helps remove bitterness.
3Return Adzuki beans to the pot with fresh water (about 3 times the volume of beans). Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until beans are very tender and easily crushed. Add more water if needed to keep beans submerged.
