1Place dried doraji in a large bowl and cover completely with cold water. Soak for at least 24 hours, changing the water every 6-8 hours, until the dried doraji is rehydrated and pliable.
2Drain the rehydrated doraji. Add salt to the doraji and vigorously rub it between your hands for 3-5 minutes to remove bitterness and soften the fibers.
3Rinse the doraji thoroughly under cold running water several times until all traces of salt and bitterness are gone. Squeeze out excess water firmly.
