1Lightly grease a 20cm round gelatin mold or bundt pan with a neutral oil and wipe excess with a paper towel. Set aside.
2For the lime layer, in a small bowl, sprinkle 21 grams of Unflavored gelatin powder over 100 grams of Water. Let it bloom for 5 minutes until softened.
3In a saucepan, combine 400 grams of Water and Granulated sugar. Heat over medium heat, stirring until the Granulated sugar is completely dissolved. Do not boil.
