1Prepare the Chhena: Ensure the Chhena is well-drained but still moist. Mash the Chhena with your palm on a flat surface until it is smooth and free of any lumps, which usually takes about 5-7 minutes.
2Form the dough: Incorporate the Semolina, Wheat flour, and Cardamom powder into the mashed Chhena. Knead gently until a soft, pliable dough forms. Be careful not to over-knead the dough.
3Shape the jhilis: Divide the dough into small, equal portions, approximately 15-20 grams each. Roll each portion into a smooth ball, then gently flatten it slightly into a disc or an oval shape.
