1Clean the Chitol fish thoroughly. Boil or steam the whole Chitol fish until cooked through, approximately 15-20 minutes. Let it cool completely.
2Carefully scrape the flesh from the bones and skin of the cooked Chitol fish. Discard all bones and skin. Mash the Chitol fish flesh very well to ensure no small bones remain and the texture is smooth.
3Finely chop 100g Onion, 10g Green chili, and 20g Fresh cilantro.
