1Wash baby eggplant thoroughly. Make two perpendicular slits from the bottom towards the stem, ensuring the stem remains attached and the eggplant is quartered but still whole. Soak the slit baby eggplant in a bowl of salted water for 15 minutes to prevent discoloration.
2Finely chop onion, green chili, and tomato.
3Heat 20 grams of vegetable oil in a pan over medium heat. Add chopped onion and sauté until translucent.
