1Preheat oven to 160°C (325°F).
2Prepare the veal: Place the veal top round between two sheets of parchment paper or plastic wrap. Using a meat mallet, pound the veal to an even thickness of about 1 centimeter. Season both sides of the flattened veal with salt and black pepper.
