1In a small bowl, combine koikuchi soy sauce, mirin, sake, granulated sugar, and dashi stock to create the sauce. Set aside.
2Bring a pot of water to a rolling boil. Add fresh ramen noodles and cook according to package instructions until just al dente, typically 1-2 minutes. Drain thoroughly and toss lightly with a small amount of vegetable oil to prevent sticking. Set aside.
3Heat vegetable oil in a large wok or frying pan over high heat. Add sliced pork belly and stir-fry until browned and crispy, about 3-4 minutes. Remove the pork belly from the pan and set aside, leaving the rendered fat in the pan.
