1Place the Pre-cooked Cotechino sausage in its original sealed packaging into a pot of cold water. Bring the water to a gentle simmer and cook for approximately 20 minutes, or according to package instructions, to heat through. Do not pierce the packaging.
2While the Cotechino is heating, rinse the Dried brown lentils thoroughly under cold running water. Set aside.
3Finely dice the Carrots, Celery, and Yellow onion to create a soffritto. Mince the Garlic.
