1Thinly slice beef flank against the grain. In a bowl, combine beef flank with Shaoxing wine, light soy sauce, corn starch, and white pepper. Mix well and marinate for 15 minutes.
2Wash bean sprouts and napa cabbage. Cut napa cabbage into bite-sized pieces.
3Bring a pot of water to a boil. Blanch bean sprouts for 30 seconds, then remove and place them in a large serving bowl. Blanch napa cabbage for 1 minute, then remove and add to the serving bowl.
