1Bring a large pot of water to a rolling boil. Add Fresh thin egg noodles and cook according to package instructions until just al dente, typically 1-2 minutes. Drain immediately and rinse thoroughly under cold water to stop cooking and remove excess starch. Toss with a small amount of Vegetable oil to prevent sticking, then set aside.
2Prepare the sauce by combining Light soy sauce, Dark soy sauce, Sugar, White pepper, and Sesame oil in a small bowl. Stir until the Sugar is dissolved.
3Mince the Garlic. Julienne the Ginger. Separate the white and green parts of the Scallions; slice the white parts into 1cm segments and the green parts into 2cm lengths. Cut Chinese chives into 5cm lengths.
